Hand-harvested fruit was fermented with indigenous yeasts and a moderate inclusion of whole bunches to enhance perfume and structure. Gentle extraction and ageing in fine French oak barriques (approximately 30% new) for 12 months built texture and integration without overpowering the fruit.
