Our latest shipment focuses on sherry-matured malts, which, in our view, pair perfectly with the distillery's robust, fruity new-make. Direct-fired stills add extra character, while traditional dunnage warehouses maintain a constant temperature, promoting long, slow maturation. However, some selections may peak relatively young.
