2008 Lake's Folly Cabernets 750ml

Lake's Folly Cabernets is a blend of Cabernet Sauvignon, Merlot, Petit Verdot, and Shiraz crafted from low-yield, estate-grown, hand-picked grapes. The fruit undergoes open fermentation, resulting in softer, subtler tannins, followed by six months in large old casks for settling. It is then aged in small French oak barriques (new and one- to two-year-old) for about a year before bottling. This wine has excellent long-term cellaring potential of up to 20 years, depending on the vintage. The blend varies according to vintage. Some releases have been 100% Cabernet Sauvignon with others a more traditional Bordeaux blend. Please contact your merchant for more information. Alcohol ABV: 12 - 13% Critic tasting note: (2008 vintage) "Despite the nomenclature, this always has a faint dollop of shiraz in the mix and yet, the semblance to fine Pauillac is often uncanny. These wines are mid-weighted, delicate, refined of tannin and of a certain pedigree stamped with the capacity for long-term aging. Notes of saddle leather, kelp, clove, licorice root and graphite. Nothing intrusive, but for the warm and nourishing feel of umami sloshing about the mouth. A little short to be the disciplinarian, but this is a wine that offers immense pleasure and the right to celebrate based on its absolute, unequivocal readiness to drink up. Now!
