Its delicate floral aromas of maraschino cherries, dried herbs, briar and blackberry reveal some meaty, gamey development. A moderately long palate of dark cherries, berries and restrained cedary oak finishes with a slightly sappy extract, with savoury and herbal notes.”

“Dominated by suppleness; well-defined structure, and a long, drying astringency. Aroma and palate merge easily and the range of flavours is complex: a combination of light plum fruits; herbs, nuts and shitake mushroom. Lingering finish , with soft stone fruits, pomegranite, and astringency which produces a very cleansing effect.”

About This Wine
From the original Estate vineyard; 8,500 vines/hectare; specific plot cropping at approx. one tonne/acre, often blended with the best fruit from our Leongatha Vineyard.
The wine is vinified in an open stainless steel fermenter with regular plunging to extract colour and flavour. Bottled without fining or filtration.
After fermentation the wine is gravity racked into a combination of new (60%) and old French Alliers oak for a maturation period of around 15 to 18 months.
