Vineyard Notes
Lavaux Saint-Jacques is situated at the beginning of the split of the Combe de Lavaux, facing south. La Combe is an ancient evacuation canal, and the soil composition shows similarities to nearby Grands Crus on the slope, including Chambertin and Mazis-Chambertin.
Vintage Notes
Winter 2016 arrived late, with the coldest days in February and March. Early spring was mild and rainy, but a severe frost on 27 April damaged much of the crop. Conditions improved through the summer, and the remaining fruit matured under good late-season weather. Harvest began on 27 September and lasted 10 days under excellent conditions.
Harvest & Winemaking
Harvesting was done manually in small crates to preserve the integrity of the fruit. Grapes were hand-sorted and destemmed before maceration in open wooden or stainless-steel vats for 3 to 4 weeks, with twice-daily punch-downs during fermentation.
Ageing
The wine was aged for about 18 months in barrels produced by the Louis Jadot cooperage, with approximately one-third new oak.
