2016 Noon Winery Reserve Shiraz 750ml

Producer tasting notes: "Produced from Shiraz grown on the 20 Rows block in Langhorne Creek by the Borrett family. Much more than a simple fruit bomb, this wine is intriguingly subtle at first with complex, savoury aromas (soy sauce, nutmeg and green tea) emerging with time in the glass. The palate is medium to full bodied and has a gentle mouth feel with persistent firm tannin to finish. It comes across as a strong silent type which will have a lotto say if you take the time to get to know it. This is a wine vunich should evolve nicely in the cellar over the next IO years and more." - Noon Winery Winemaking Noon Reserve Shiraz is matured in small (300 lite) French and American oak barrels for 18 months. We use approximately 30-40% new oak for this wine, with the aim of adding complexity and structure without dominating the fruit flavour. Each year we work closely with the Borrett family to choose the ideal harvest time. Fermentation takes place in our small open vats which are hand plunged to help extract the naturally abundant colour and tannins present in the grapes. After fermentation is complete (typically 10 to 20 days) pressing is done by hand using small manual basket presses and care is taken not to extract too much bitterness or astringency by rough handling and over-pressing. The wine is crushed, fermented, matured and bottled on our property. Ageing Noon Reserve Shiraz is matured in small (300 lite) French and American oak barrels for 18 months.
