Produced by Two Hands Wines, Ares sits at the pinnacle of the portfolio, crafted from exceptional parcels of old-vine Shiraz selected for intensity, depth, and ageing potential. The 2016 vintage in Barossa Valley is widely regarded as outstanding, delivering fruit of exceptional concentration, balance, and tannin quality. Low yields and optimal ripening conditions provided the foundation for a wine of immense richness and structural precision. In the winery, fruit was hand-harvested and fermented in small batches, with extended maceration to extract maximum colour, flavour, and tannin structure. The wine was matured in high-quality French oak barrels, including a significant proportion of new oak, for an extended period to build power, complexity, and longevity. The wine opens with an intense and layered bouquet of blackberry, dark plum, and blueberry, interwoven with notes of dark chocolate, espresso, liquorice, and sweet spice. The palate is full-bodied and deeply concentrated, with dense, plush fruit, velvety tannins, and a long, opulent finish. Despite its scale, the wine maintains balance and precision, reflecting both vineyard quality and meticulous winemaking.
