Organically grown and crafted, this wine is made from 100% Cabernet Sauvignon. Aromas of dark chocolate, cedar, and a blend of dried Italian herbs mingle with bright notes of red currants and mulberry. The palate is rich yet precise, showcasing ripe fruit balanced by chalky tannins that add texture and length. Flavors of ripe mulberry merge with cacao and tobacco leaf. The 2017 vintage was perfect for Cabernet Sauvignon, featuring a long, gradual ripening period that allowed for extended hang time. A wet spring promoted strong early vine growth, followed by cooler-than-usual conditions in January and February. A significant cooling trend in early March delayed ripening, leading to the Cabernet harvest on May 3rd, when the fruit was picked under clean, ideal conditions.
