Viticulture and Winemaking Practicing organic viticulture, Roagna harvests fruit manually at optimal ripeness. Fermentation occurs naturally with indigenous yeasts, followed by a long maceration lasting up to 80 days. The wine is then matured in large neutral oak botti for over five years. Bottling is done without fining or filtration to preserve purity and terroir character.
