Overview The 2019 Bindi Dhillon Col Mountain Shiraz is a poised and expressive interpretation of Heathcote’s renowned red soils, showcasing purity of fruit, fine structure, and balance. Crafted with restraint and precision, it captures the essence of cool-climate Shiraz from this elevated and mineral-rich site. Vineyard and Winemaking Sourced from the Col Mountain vineyard on the northern edge of Heathcote, the fruit grows in ancient Cambrian red clay over bluestone, producing naturally low yields and concentrated flavours. Hand-harvested and fermented with indigenous yeasts, a portion of whole bunches was included to enhance perfume and texture. Maturation in seasoned French oak for twelve months allowed the wine to gain complexity without overt influence of wood, preserving freshness and detail. Tasting Notes Vibrant aromas of blackberry, plum, and violet intertwine with hints of black pepper, spice, and graphite. The palate is medium-bodied and refined, offering layers of dark cherry, mulberry, and subtle earthiness framed by silky tannins. The finish is long and pure, with lifted acidity and mineral precision. Style and Character This vintage exemplifies Bindi Dhillon’s contemporary approach to Shiraz — elegant rather than heavy, expressive yet restrained.
