Vineyard and Winemaking Sourced from the Col Mountain vineyard on the northern edge of Heathcote, the fruit grows in ancient Cambrian red clay over bluestone, producing naturally low yields and concentrated flavours. Hand-harvested and fermented with indigenous yeasts, a portion of whole bunches was included to enhance perfume and texture. Maturation in seasoned French oak for twelve months allowed the wine to gain complexity without overt influence of wood, preserving freshness and detail. Tasting Notes Vibrant aromas of blackberry, plum, and violet intertwine with hints of black pepper, spice, and graphite.
