Winemaker Elizma Visser is deeply passionate about her creations, striving to capture the essence of the Breedekloof’s shale-rich, windy terroir in wines that are both pure and refined. The approach is intentionally natural, aiming to preserve the authentic expression of the vineyards with minimal intervention throughout the winemaking process. Situated on the slopes of Olifantsberg Mountain, the vineyards flourish in soil composed of shale, schist, and sandstone. The primary goal is to produce wines that embody the distinctive characteristics of their location, the diverse soils, and the natural essence of the vineyards. These vineyards yield grapes that result in wines marked by a captivating purity of fruit and elegance. The winemaking process involves traditional oak casks, oval foudres, and egg-shaped vessels, in addition to trusted French oak barrels, with a small portion of new wood each year. Why do we like it? In this moderate climate, you should expect for this Chenin Blanc to have a refreshing high acidity, medium body, a moderate alcohol level but with ripe aromas. Also, notes of yellow apple and pear combined with a touch of tropical fruit. The wines are aged in oak with controlled use of new oak.
