The 2020 Forest Hill Estate Shiraz is a benchmark cool-climate red from Mount Barker in Western Australia’s Great Southern region. Grown on the estate’s sustainably managed vineyards, this Shiraz reflects purity, balance, and regional elegance over power.
Tasting Notes
Aromas of dark cherry, blackberry, and plum mingle with layers of black pepper, violets, and subtle oak spice. The palate is medium-bodied and beautifully structured, showing silky tannins, fine acidity, and notes of dark fruit, olive tapenade, and cocoa. The finish is long and savoury, with a refined mineral edge that typifies cool-climate Shiraz.
Winemaking
Hand-harvested fruit was destemmed and fermented in small open-top fermenters, with gentle plunging to preserve aromatics and texture. The wine was matured in French oak barriques (20% new) for 14 months, achieving harmony between fruit expression and oak influence.
Style & Cellaring
Elegant yet complex, this wine combines fruit purity with fine structure. It can be enjoyed now for its freshness and balance or cellared for 8–10 years to develop greater depth and spice.
Food Pairing
Perfect with lamb cutlets, roasted duck, or slow-cooked beef. Its subtle spice and savoury length make it an excellent match for modern Australian or Mediterranean cuisine.
