Vineyard and Winemaking The St. Matthias Vineyard benefits from well-drained soils and long, cool ripening conditions that preserve acidity and aromatic clarity. Hand-harvested fruit was whole-bunch pressed and fermented in French oak barriques, with a proportion new to add subtle complexity. Partial malolactic fermentation and extended lees ageing contributed texture and depth while maintaining vibrancy and balance.
