Each variety is picked at optimum ripeness and fermented separately to preserve distinct varietal character. Sauvignon Blanc is picked once herbaceous flavours have diminished, Semillon when acidity softens, and Muscadelle at peak flavour intensity. Older barrels are used for the entire production, with full barrel fermentation. Hard pressing is employed to enhance texture, and lees stirring is used to build body and complexity. The wine is typically aged in barrel for 11 months, during which primary fruity elements settle and more complex aromas begin to develop.
