Since 2001, the Dhillon family has sourced grapes from Colbinabbin’s Mount Camel Range, crafting wines with a Pinot Noir maker’s finesse. Their organic vineyard on red Cambrian soils reflects a two-decade commitment to authenticity, producing vibrant, balanced Shiraz that captures Heathcote’s soul, making every sip a personal journey.
Why do we like it?
Bindi’s Pyrette Shiraz is a revelation, blending Heathcote’s richness with elegance. Hand-picked from Colbinabbin’s rocky soils, it’s wild-fermented in open vats with 20% whole bunches, matured in French oak (10-20% new). Expect dark plum, mulberry, spice, and graphite, with a silky, medium-bodied palate and firm tannins. Its vibrant acidity and Northern Rhône-like peppery finesse make it unforgettable.
