Adam foster is a legend. A very talented and passionate guy that once was a chef, then a sommelier, now a top wine maker. The name Syrahmi is derived from the French term "Syrah," which refers to Shiraz, and "Ami," meaning friend. The concept behind the name suggests a "friendly Shiraz" or "a companion to Shiraz." The 2023 Demi by Syrahmi is crafted from a combination of three vineyards located in the Heathcote region: Kennedy’s, Carl Brown, and Humis. This blend features a notably high proportion of whole bunches, exceeding 70%. It undergoes fermentation with wild yeast and malolactic fermentation. The process involves open fermentation, with foot and hand plunging and minimal pumping over. The wine is aged for 12 months in both new and seasoned French oak, followed by an additional 2 months in stainless steel prior to bottling. Why do we like it? The essence of this wine lies in its suitability as an everyday drink. There’s no requirement to age it, although it has the potential to last for over five years.
