Style & Winemaking:
This luscious and aromatic dessert wine is made from cane-cut Riesling grapes, left to shrivel on the vine to naturally concentrate sugars. After selective hand-picking, the fruit is gently bag-pressed and cold-settled for 48 hours. Fermentation with a neutral yeast proceeds slowly at cool temperatures for around three weeks, then is stopped at the desired sweetness level. The wine rests on lees for 6–8 weeks before bottling to build texture and depth.
Tasting Notes:
Light straw-yellow in colour. The nose bursts with honeysuckle, baked apple, mandarin, quince paste, rosewater, and bergamot tea. The palate is rich and balanced, its sweetness lifted by crisp green apple and fine acidity. Subtle phenolics lend gentle grip, creating a crunchy, lively finish. A late-picked Auslese-style Riesling reminiscent of top German dessert wines—decadent yet refreshing.
Food Pairing:
An excellent match for foie gras, blue cheeses (especially Roquefort), and fruit-based desserts such as pineapple tarte Tatin or apple strudel.
