Wine OverviewThe Sauvignon Blanc – Semillon is Sorrenberg’s most distinctive white blend, renowned for its textural depth and longevity. Unlike typical aromatic Sauvignon styles, this wine is wild-fermented and matured in oak, creating a complex, structured expression that ages beautifully over a decade or more. VineyardSourced from Sorrenberg’s biodynamically farmed, dry-grown vineyard at 560 metres elevation, where granite soils and cool nights deliver fruit of intense flavour and piercing natural acidity. Low yields and meticulous vineyard care ensure both concentration and balance. WinemakingHand-harvested fruit was whole-bunch pressed, then fermented with indigenous yeasts in French oak barriques (around 20% new). The wine spent approximately 10 months on lees with regular bâtonnage, enhancing texture and integrating fruit, oak, and acidity into a seamless whole. VintageThe 2025 Beechworth season was mild and even, producing pristine fruit with lifted aromatics, fine structure, and refreshing acidity — ideal conditions for this distinctive barrel-fermented white blend.
