Dingle Single Pot Still is a small batch Irish whiskey crafted from a mash bill of locally sourced malted and unmalted barley, distilled in traditional copper pot stills. Matured in a combination of Bourbon (59%), Oloroso (33%), Pedro Ximénez (4%), and red wine casks (4%), it is bottled without chill filtration or added colouring, reflecting Dingle’s modern craft approach to classic Irish pot still whiskey.
Tasting Notes
Colour: Leatherwood honey
Nose: Gentle baking spices, nutmeg, cinnamon, and allspice
Palate: Velvety notes of cooked dark fruits, brown sugar, and spiced stewed apples
Finish: Classic pot still spices evolving into toasted oak, soft honey and lingering note of nutmeg
About the Distillery
Dingle Distillery was founded in 2012 on Ireland’s western coast in County Kerry and is one of the pioneers of the modern Irish whiskey revival. Focused on small-batch production and traditional methods, the distillery produces expressive, fruit-driven whiskeys shaped by maritime maturation conditions.
