Originating in antiquity, this green-skinned, tightly clustered grape variety has an illustrious history dating back to the 10th century. Its journey across Europe over millennia has shaped many of today's beloved modern grape varieties.  Thriving in the cool climate of the Yarra Valley, this grape undergoes gentle harvesting, followed by a cool fermentation process in tanks and barrels to preserve its fresh aromatics. Aging on lees contributes to its textural complexity. Exuding a straw hue, this wine delights with an aromatic bouquet reminiscent of citrusy orange blossoms and delicate white flowers. On the palate, vibrant notes of lemon and lime dance alongside chalky mineral undertones, culminating in a finish characterized by subtle spice and lively acidity.
