$169.99
Monumental, Dark-Fruited Shiraz from Barossa’s Elite Vineyards Standish Wine Co Schubert Theorem Shiraz 2023 is one of Australia’s most collectable, powerful and impeccably crafted single-vineyard wines. Sourced from the legendary Laycock Family Vineyard (Roennfeldt Road, Marananga) and made by Dan Standish  regarded as one of the world’s top Shiraz craftsmen, this is an explosive, structured, profoundly complex wine built for decades of evolution. Halliday Wine Companion - 98 Points  The '23 release of the Schubert Theorem is just gorgeous. It's kinetic. The purest of plum, black cherry and blueberry fruits stretch impossibly long on the palate, with impressive density and a real sense of grace to its travel. The edges are smooth and round here and there is a calmness as it glides across the palate, the tannins more in the powdery spectrum (and I'm sure this comes from the portion that spends its gestation in a concrete Nomblot egg). Bunch (50% or thereabouts) is bang on here, lending a golden ratio of spice, sinew and texture. But man, that pure rolling swell of fruit is the star; this is a wonderfully composed wine. Dave Brookes  Tasting Notes Aroma: Inky black fruits, blueberry compote, dark cherry, violets, graphite, cured meat, anise and exotic spice. Palate: Deep, concentrated and flawlessly layered with waves of black fruit, cocoa, smoked earth, licorice and mineral-etched tannins. Immense intensity delivered with perfect balance. Finish: Endless, driving and powerful with dark berries, spice and fine tannins that linger for minutes. Food Pairing / Serving Suggestions Best enjoyed with premium red meat, dry-aged ribeye, lamb shoulder, venison or slow-braised short ribs. Serve at 16–18°C and decant for 3+ hours in youth for maximum expression. About the Winery / Region Founded in 1999, Standish Wine Co has become one of Australia’s most revered artisanal producers. Cellaring Potential Built for extraordinary longevity, 20–30+ years. Expect evolving layers of savoury complexity, truffle, graphite and velvety tannins through 2050 and beyond. Collector’s Note Schubert Theorem is one of the most sought-after wines in Australia, routinely achieving 98–100 point scores from leading global critics. The 2023 release will be extremely limited and highly collectible, a centrepiece for any serious cellar.
