Fine Cacao is a collaboration between Macallan Whisky Maker Polly Logan and pastry chef Jordi Roca of three Michelin star restaurant El Celler de Can Roca. Jordi is also the owner of the famed chocolate boutique, Casa Cacao and in 2018 was voted "World's Best Pastry Chef" by Restaurant Magazine. Working alongside Jordi, Polly studied the techniques of chocolate making and would go on to create this whisky as a perfect pairing for high-quality chocolate. The whisky has been 100% aged in a ex-Sherry American and European oak casks.

The first bottling in a new line of releases for Macallan, the Harmony Collection aims to bring more sustainability to Macallan's top tier whisky. The packaging for this edition utlises discarded cacao husks. The fine cacao edition is a collaboration with Spanish chef and chocolatier, Jordi Roca of Casa Cacao and El Celler de Can Roca. Taking inspiration from their high quality chocolates, Polly Logan searched through the Macallan warehouses for casks rich in chocolate style notes. Note that this is the fine cacao edition of the harmony release, bottled at 40% and only available to travel retail.
